As a busy mom, I’m always on the hunt for family-friendly recipes that taste great and are easy to make.

At the end of a long day, there’s nothing more satisfying than quickly tossing something together for dinner that everyone devours and enjoys – and that’s exactly what happened with these Pillsbury biscuit pizza muffins.

Not only are they super simple to make, but they’re also surprisingly filling! Serve them with a salad, and you’ve got a complete meal in no time!

I also like to prepare a batch of these and store them in the refrigerator for an easy after-school snack or make-ahead school lunch idea for my kiddos.

The only problem is my entire family like them so much that I have a hard time keeping them on hand.

Recently these muffin pan mini-pizzas have become a huge hit. Thanks to Tik Tok, variations of this easy recipe have gone viral and become super popular since they can be served as a meal, appetizer, or snack.

In this version, the miniature stuffed crust cheesy pepperoni pizzas are made in a muffin tin. The base of these little pizzas is made from store-bought canned biscuit pieces wrapped around ooey-gooey melty cheese sticks. With just a few simple ingredients, these delicious pizza muffins are sure to become a family favorite.

How to Make Easy Biscuit Pizza Muffins

Supplies:

  • 12-count muffin tin
  • knife
  • cutting board
  • mixing bowl

Ingredients:

  • 16oz/8 count can of jumbo/large biscuits
  • ½ cup of pizza sauce
  • 2.5 oz chopped pepperoni slices (half of a regular 5 oz package)1/3 c or mini pepperonis
  • 1/4 cup chopped onion (white or green, optional)
  • 1/4 cup sliced black olives (optional)
  • 4 mozzarella cheese sticks, cut in half lengthwise
  • 1 cup shredded mozzarella cheese
  • 1 TBSP olive oil
  • 1/2 cup shredded parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic seasoning
  • ½ tsp onion seasoning

Directions:

1. Preheat your oven to 375 degrees and lightly grease your muffin pan with cooking spray.

2. Take one biscuit and use your fingers gently stretch it out without breaking it into a rectangle shape, long enough to fit a cheese stick in. You could use a rolling pin if you like.

3 . Place one cut cheese stick into the biscuit and pinch the side of the biscuit closed around the cheese stick.

4. Slice the dough-wrapped cheese stick into five equal parts. Make sure each cheese stick is completely covered by the dough.

5. Gently shape each piece into a ball shape by rolling it between your palms. Repeat this step with the remaining biscuits and cheese sticks.

6. Next, place all of the cheese-filled dough balls into a bowl.

7. Add the olive oil, garlic powder, onion powder, Italian seasoning, pizza sauce, chopped onions, and sliced olives to the bowl.

8. Gently mix the dough balls and ingredients, coating the dough balls evenly with the pizza toppings, sauce, and seasonings. (I recommend using your hands for this step).

9. Next, you will place 3 cheese-stuffed dough balls into each muffin cup. You will have 3-4 extra balls; add those to the muffins that look the smallest.

10. Gently press down on each muffin cup to compress the balls together a little bit.

11. Sprinkle each muffin with parmesan cheese.

12. Slide the pan into the preheated oven and bake for 15-18 minutes, until the cheese is bubbling and the edges start to brown.

13. Once they’re removed from the oven, allow them to cool in the pan for 5 minutes, then move them to a cooling rack.
