Easy Cheesy Sloppy Joe Mac and Cheese Bombs

This recipe was inspired by my kiddos.

They both love Mac and Cheese and Sloppy Joes, but they are both SO messy.

I wanted to come up with something I could toss into their school lunches or eat on the way to practice on busy weeknights.

That’s when I decided to take the ground beef mixture that I use for Sloppy Joes, add in some Macaroni and Cheese and stuff it all into a biscuit – YUMMMMM! 

This recipe makes a great easy dinner idea but is also perfect for school lunches, after school snacks, and a crowd pleasing potluck appetizer. 

Made with pantry staples in just 30 minutes, this recipe is sure to make a regular appearance in your monthly meal planning menu!

Ingredients:

  • 2 cans of Biscuit Dough
  • 1 lb. of Hamburger
  • 1 can of Sloppy Joe Mix
  • 1 box of Mac and Cheese (prepared)
  • 4 tablespoons of Melted Butter
  • 1 teaspoon of Garlic or Minced Garlic
  • 1 teaspoon of Italian Seasoning
  • Parmesan Cheese

Step by Step Directions:

  • Start by browning and draining your hamburger in a large nonstick skillet. Add in 1 can of classic sloppy joe mix and set aside.
  • Roll out each biscuit to form a large flat circle.

  • Place a spoonful of sloppy joe mix and a spoonful of prepared mac and cheese into the middle of the rolled-out biscuit.

  • Gently bring up the sides of the dough and pinch them together until you form a ball and everything is packed neatly inside.

  • Next, mix your melted butter, garlic, and Italian seasoning in a small bowl.
  • Lay your biscuit bombs out on a greased baking sheet and brush your butter mixture on top of each one.

  • Bake according to biscuit instructions.
  • Sprinkle it with parmesan cheese and enjoy!

Yes! You can substitute ground beef for ground turkey, ground chicken, or ground pork.

Can I make these ahead of time?

Yes! You will want to bake them and allow them to cool thoroughly on a wire rack first. Then you can store them in the fridge for up to 5 days, or in an airtight container in the freezer for up to 3 months.

How should I reheat these?

I recommend using your microwave on 50% power and heating in 30 second intervals until heated through.

What can I serve with these?

A simple green salad, green beans, or corn on the cob help to make this a completely kid-friendly family dinner idea.

Can I cook these in a muffin tin?

Absolutely! Just spray the inside of the muffin cups with nonstick spray, and the bombs will bake up in a muffin shape.

Do I have to use a can of Sloppy Joe Mix?

Nope! You can definitely use your favorite Sloppy Joe recipe. I just prefer to keep things as quick and easy as possible. However, if you feel like making it from scratch with Worcestershire sauce, chili powder, and ketchup, you absolutely can.
