  • ½ yellow onion, diced
  • 2 cloves garlic, minced

How to Make Slow Cooker Beef Stroganoff

Step 1: Add the main ingredients
Add the beef stew meat to your slow cooker. Season with salt, pepper, and paprika. Add the diced onion and minced garlic on top.

Step 2: Make the sauce
In a small bowl, whisk together the cream of mushroom soup, beef broth, and Worcestershire sauce. Pour the mixture evenly over the beef.

Cover and cook on high for 3–4 hours or low for 6–8 hours. Resist the urge to lift the lid, every time you do, heat escapes and the beef takes longer to become tender. ***See note below.

For the most tender beef, I highly recommend cooking on low for 6-8 hours. Cooking stew meat quickly can lead to tough pieces of meat. I prefer stroganoff when the beef shreds and becomes a part of the sauce.

Step 4: Stir in the creamy goodness
In the last hour of cooking, add the softened cream cheese and sour cream. Stir until everything melts together into a smooth, velvety sauce.

Step 5: Add the noodles
Cook your egg noodles according to package directions, then add them directly to the slow cooker. Stir to coat every noodle in that gorgeous sauce.

Soften that cream cheese: Cold cream cheese won’t melt smoothly. Take it out of the fridge 30–60 minutes before you need it, or cut it into small cubes to speed things up.

Storing leftovers: Transfer any leftovers to an airtight container and refrigerate for up to 4 days. When reheating, warm on the stovetop over low heat. If the sauce thickens too much, a splash of broth will loosen it right up.
