These easy, no-bake rainbow pudding cups make the perfect treat for St. Patrick’s Day or any rainbow-themed party.

My favorite part is that you don’t need food coloring, pastry bags, or popsicle molds that many recipes call for.
All you need are a few simple ingredients:
- Blue Pudding Cups (Unicorn Magic Snack Pack)

Instructions:
These seriously could not be any easier to make:
1. Remove lid from pudding cup. (Duh…sorry, I couldn’t help myself!)
2. Place 15-20 mini marshmallows on top. The marshmallows are important because they look like clouds and will hold the rainbow candy in place to give it the perfect arched shape.
3. Place a strip of rainbow candy over the top of the marshmallows and tuck the ends into either side.
Repeat with remaining pudding cups.

What if I can’t find blue pudding?
The Magic Unicorn Pudding Snack Packs are pretty easy to find at almost any grocery store and on Amazon and come with blue and pink pudding cups.
However, if you can’t find them, you can use any vanilla pudding cup and just add some blue food coloring.
If you would like to go the homemade route, you can make vanilla pudding from scratch or use instant pudding and then add the blue food coloring.
What else can I use for clouds?
If you can’t find mini marshmallows or don’t like them, you could also use whipped cream or Cool Whip for clouds on top. Just be sure to add the topping right before serving so it doesn’t melt and make a runny mess.
Can I add a pot of gold?
Yes, just add a small foil-wrapped gold coin to the top of each treat to make it perfect for St. Paddy’s Day. You could also add a Rolo, or even add gold sprinkles.
