Easy Halloween Candy Corn Parfait

Halloween is so much fun!

But it can also be a little insane when you think of all the  sugar, candy and processed foods that usually come with it.

As a mom and elementary school teacher, I always appreciate Halloween treats that are fun, and tasty, but also have some sort of nutritional value.

The thing is, that can be hard to do.

A few years ago a parent sent a version of this candy corn themed dessert for our class Halloween party and I thought it was such a clever idea.

I made a few tweaks to the recipe and the end result is what you see here, an easy fruit filled snack that is perfect for a Halloween breakfast, snack, or dessert.

The candy corn colors are created by layering chunks of pineapple, cantaloupe and whipped cream into small mason jars or small clear plastic cups.

FAQs

Do I have to use cantaloupe for the orange layer?

No, you can use any type of orange fruit. Many people make this recipe with mandarin orange slices, but a lot of kids find the combination of oranges and pineapple to be really sour. The cantaloupe  is a great mild option that can be enjoyed by everyone. You could also use canned mandarin oranges or regular oranges, but those take a lot of time to peel and segment.

Can I make this ahead of time?

Yes, you can assemble the parfaits up to an hour before serving. Just wait until right before serving to add the toppings and garnishes.

What else could I use for the yellow layer?

There aren’t many yellow fruits that are easy to find in America. You could try banana, but it’s not as yellow as the pineapple. I’m sure it would still taste great though.

What else could I add?

The options are endless!

  • Vanilla Yogurt
  • Greek Yogurt
  • Vanilla Pudding

Can I make my own whipped cream?

Yes, just  add cold heavy cream to a bowl and whip until soft peaks form. Add in powdered sugar and vanilla and you’re all set.
