- 1 tbsp. tomato paste
- 1/2 c chopped yellow onion (can use frozen)
- 1 packet McCormick Taco Seasoning (or choose your favorite brand)
- 2 (10 oz.) cans of Rotel diced tomatoes with chiles
- 1 (15 oz) can of black beans, drained
- 1 (15 oz.) can of kidney beans, drained
- 1 (15 oz.) can of corn, drained
- 1 (32 oz.) box of broth (any kind with work)
- Your favorite taco toppings!
Directions:
1) In a large pot, brown the ground beef.
2) Once browned, drain and return the beef to the pot.
3) Add the chopped onion and cook over medium-high heat for 1-2 minutes.

4) Add the tomato paste, taco seasoning packet, Rotel tomatoes, black beans, kidney beans, corn, and broth to the pot.

5) Heat over medium-high until the soup comes to a simmer, then reduce heat and simmer for 20 minutes.

When serving, top each bowl with your favorite taco toppings, tortilla strips, or anything else your family loves!
